Processing Methods

Washed (Wet Process):

After harvesting, the outer skin and pulp are removed. The beans are soaked in water to remove the sticky layer (mucilage), then dried. This creates clean, bright flavors—often with floral or citrus notes.

Natural (Dry Process):

The whole coffee cherry is dried in the sun with the fruit still on the bean. This allows sugars from the fruit to seep into the bean, producing bolder, sweeter, and fruitier flavors.

Honey Process:

A middle ground. The skin is removed but some pulp (mucilage) stays on during drying. It results in a cup that is sweet and full-bodied, but cleaner than natural coffee.

Coffee Regions of Ethiopia

Ethiopia is the birthplace of Arabica coffee. Its highlands, fertile soil, and diverse climates make it home to some of the most distinct and sought-after coffee profiles in the world. Each region offers unique characteristics based on elevation, soil type, rainfall, and traditional farming methods.

Ethiopian Yirgachefe 

Yirgacheffe is in the southern region of Ethiopia, located in the Gedeo Zone. Coffee has been grown in this region for centuries, with the indigenous heirloom varieties passed down through generations. The region's unique microclimate, with its fertile soil, ample rainfall, and high altitudes (1,700–2,200 meters absl, provides ideal conditions for the cultivation of exceptional coffee.

Cultivation and Varieties

The coffee farms in Yirgacheffe are typically small, with an average size of just 0.5 to 1 hectare. These farms are tended by families who have been growing coffee for generations, using traditional agroforestry practices that incorporate diverse shade trees and other crops. The coffee plants in Yirgacheffe are primarily composed of indigenous heirloom varieties, which contribute to the region's distinctive flavor profile.

Guji’s coffee stands out as a jewel. Nestled in the south of Ethiopia, bordering the more famous Yirgacheffe and Sidamo regions, Guji has carved its own identity as a producer of exceptional, high-quality coffee.

These conditions contribute to slower maturation of the coffee cherries, allowing for the development of nuanced flavors.
